Vegan Bounty bars

I hope you are starting to enjoy a slower pace that autumn brings, cosy evenings with a book or a film... And if you love being in the kitchen getting creative, I have something to share with you!
I've just came back from Portugal where I co-led an incredible 1 week retreat in the mountains of Algarve and the thing I wanted to share with you is a RECIPE! That's right, our incredible chef Laura from Casa di Yoga was surprising us with amazing flavours, one of my favourites were vegan bounty bars. I have already made a few attempts so here goes my improv:

 

Ingredients for the coconut base:
1 cup shredded coconut
2 tbsp of maple syrup or agave
2 tbsp virgin coconut oil
1/2 tsp vanilla extract 1/8 tsp salt Raw chocolate:
*you can always simply just melt good quality chocolate/chocolate chips
otherwise... 200g cacao butter 100g cacao powder maple syrup or agave according to your tase pinch of sea salt 1 tsp vanilla extract
I also added around 50g of my ceremonial cacao from Bali into the mix


Method:
Put all 5 ingredients of the coconut base into a food processor. From the blended mixture I formed coconut layers in my cupcake molds. Then I melted my chocolate ingredients in a glass bowl that was placed over the hot water. Once you create your chocolate mix, do a taste test. If you are happy pour your raw chocolate on top of your coconut layer and place it in the freezer. That's done, absolute deliciousness!
